Egg Fried Rice -with choice of veggies and protien

                                            

 Ingredients:

4-5 cups cooked rice, made from about 1 cup of raw rice (cooked and cooled so the grains are separate, preferably left over rice) 

3 Eggs

6 Shrimp, 1 chicken tenderloin (this can be replaced with any choice of meats or skip all together)

1/2 tsp ginger garlic paste (optional)

1 tsp of garlic based seasoning that you have

1/2 tsp chili powder (optional)

6 tsp of soy sauce

1 tsp vinegar or juice of 1/4 lemon

1.5 cup finely chopped cabbage

1 cup finely chopped carrot

1 cup french cut beans 

1/4 red onion chopped in long pieces

1 Jalapeno cut into long strips

2 - 3 tsp chopped garlic

2 tbsp oil

2 tbsp chili sauce

1/2 tsp pepper powder

salt to taste (Soy sauce is salty, so use accordingly)



Directions:

Marinate shrimp and chicken in garlic seasoning, 2 tsp soy sauce, vinegar, ginger garlic paste, chili powder and salt, set it aside for 30 mins. (You can modify how you want to marinate)

Air fry shrimp, chicken, red onions and jalapenos at 400 degrees for 5 mins (or saute in wok on high heat in a tsp of oil for 5 mins) and set aside.

Heat 1 tbsp oil in a wide pan or large wok add chopped garlic, once garlic is fragrant add cabbage, carrots, french cut beans and suate until half cooked. 


Move the veggies to the side and make space in the center, add 1 tbsp of oil and add 3 eggs along with salt and pepper and stir till the eggs are semi cooked.

 Mix all the veggies together with eggs, also add the fried shrimp, chicken, onions, jalapenos to the wok. Add rice and mix it all well. Add soy sauce, chili sauce and salt. Adjust the last three ingredients to taste. 

Enjoy fried rice loaded with veggies and protein of choice.

Banana, Blueberry, Walnut, Almond flour bread


 Ingredients 

2 1/2 cups almond flour

3 ripe bananas

1/2 cup blueberries

1/4 cup chopped almonds

3 eggs

3 tbsp honey

1/4 cup plain yogurt

2 tsp cinnamon

2 tsp vanilla extract

1 tsp baking soda

1/2 tsp Salt


Directions

Preheat the oven at 350, mine is convection oven so I set it at 325.

Mash the bananas, add eggs, vanilla, yogurt and honey, whisk it all together.

In a separate bowl mix together almond flour, cinnamon, baking soda, salt.

Add this to the wet ingredients and combine them stirring gently.

Add chopped walnuts and blueberries, gently fold them evenly.

Spray or line with parchment paper a 9 x 5 loaf pan (I used 4 small 5 x 3 pans)

Bake for 50 - 55 minutes in a regular oven (I baked for 45 minutes). Toothpick inserted in center should come clear.

Let it cool in the pan for an hour before gently loosening the edges and inverting them onto a cooling rack. Let them cool for another 2 hours and enjoy!!

Chicken Korma (Chicken in yogurt sauce)

                                        

Serves 3-4

Marination 1-2 hours

prep & cook time 1 hour

 Ingredients:

Marinate
1 whole chicken cut in small or 6 chicken thighs skin removed and cut vertically into 2 pieces
1 tbsp Ginger Garlic Paste
1 tsp chili powder
1 tsp coriander powder
1/2 tsp cumin powder
1 tbsp lime juice
2 tbsp oil
1 1/2 cup yogurt
salt to taste


Ingredients
1/3 cup oil
1/2 tsp cumin
6-8 cloves
1 inch cinnamon stick
4 cardamom
8 -10 pepper corns
1/4 tsp turmeric
1 medium onion chopped fine
2-3 large tomatoes chopped
1 Jalapeno cut in large circles
salt to taste

Garnish
Chopped cilantro and mint(optional)

Directions

Marinate all ingredients under Marinate for 1 to 2 hours in refrigerator.

Heat oil, add cumin followed by all the whole spices, stir few seconds, make sure not to burn, add onion and cook till transparent.
Add tomatoes, turmeric and salt, cook until tomatoes are mushy. 
Add the marinated chicken and cook on medium to high heat, stirring every few minutes.
After about 5 - 10 minutes you should see enough liquid coming out from marinated chicken (if not add half cup water), at this time set the heat to medium/low and let it cook for 20 minutes. 
Add Jalapenos and continue to cook for another 10 minutes. 
You should see that the oil is separated and chicken is well cooked. Add cilantro mint, remove from heat and let it sit covered for few minutes.

1/2 cup of water will not be needed most of the time. At the end if you think gravy is too watery cook it on high for few minutes, making sure not to burn. 

Enjoy with flavored rice, white/brown rice, naan or roti!!!!

Eggplant Pulao --Vankaya pulao in Instant pot



serves 5
Time 1 hour 15 mins

Ingredients:

1 large Eggplant chopped into small pieces.
3 cups Basmati rice
1/4 large onion chopped in large pieces
4 green chilies
2 tsp ginger garlic paste
3/4 tsp garam masala
1/4 tsp turmeric
1/2 tsp chili powder
1/4 cup cashews
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1 red chili broken 
Handful of cilantro chopped
1/4 cup oil
salt to taste
4.5 to 5 cups of warm water.

Directions:

Wash rice till water runs clear and soak.
Set the instant pot on saute mode.
Heat oil, add mustard, cumin and red chili. 
Add cashews followed by onions and green chilies. 
saute for a minute.


Add chopped eggplant and cook until it is tender.
Add ginger garlic paste and cook for 3-4 minutes.
Add turmeric, chili powder, salt, garam masala and saute for couple more minutes.


Drain the water from the soaked rice and add to eggplant mixture.
Stir for a minute, add cilantro and cancel the saute mode on instant pot. 
Add warm water, close lid and set on pressure cook for 6 minutes. 
After the pressure is released naturally remove lid and gently stir. 


Enjoy with raita!!!

Mutton Dum Biryani -Instant pot


Serves 6
Time 2 hrs (24 hour marination)

 Ingredients:

Marinate
3 lbs Goat leg cut in small pieces
2 tbsp Ginger Garlic Paste
1 cup yogurt
6-8 green chilies slit or 2 Jalapenos cut in quarters
6 cloves
1 inch cinnamon stick
4 cardamoms
8 peppercorns
1 tsp Shahjeera
1 tsp turmeric
2 tbsp lime juice
1/4 cup cilantro chopped
1/2 cup mint chopped
salt to taste

Biryani
4 cups Basmati Rice
4 - 6 cups warm water
1/4 cup oil
2 tbsp Ghee
4 cloves
1 inch cinnamon stick
2 cardamoms
1/4 cup cilantro and mint
salt to taste

Garnish
1 large onion caramelized in a tsp of oil and sprinkle of salt. 

Directions

Marinate all ingredients under Marinate for 24 hours in refrigerator.

Set instantpot on saute and heat 1/4 cup of oil till warm. Add the marinate. 

Cancel Saute mode. Close lid and pressure cook for 12 mins.

Wash the basmati rice till water runs clear and leave it to soak. 

Heat 4 - 6 cups of water, just heat do not boil.

You can caramelize the onion at this time and set aside.

When instantpot naturally releases pressure open lid. You may see good amount of liquid.


Gauge that liquid. With no liquid, you would need 6 cups of water. Reduce water by a cup or two based on the amount liquid you see in the mutton. 

Drain the soaked rice and place on the cooked mutton. 
Add whole spices, cilantro mint and salt. 
Add heated water. 
Add Ghee. 
Do not stir during this process. 
Close lid and pressure cook for 6 mins. 

When pressure is released naturally, gently stir from the bottom.


Move to a serving dish.


Garnish with caramelized onions.

Enjoy!!!!

Lentil Quinoa Soup

Happy New Year 2018!!!

Starting this new year with a resolution to eat healthier. The plan is to focus more on vegetarian one dish meals.

I picked this recipe from a dear friend and tweaked it a little to make it gluten free.
Its a protein rich, simple nourishing one dish meal that can be made in minutes.



Ingredients:

1/2 cup Toor Dal (Split pigeon peas)
1/2 cup Moong Dal (Split Green Gram)
1/4 cup Quinoa
1/2 cup diced onions
1 cup diced carrots
1 cup diced celery
1 cup diced tomatoes
2 cups chopped kale
3 green chilies (adjust to taste)
1/2 tsp crushed or finely chopped ginger
1/2 cup chopped coriander (cilantro)
1/2 tsp coriander powder
1/2 tsp turmeric
salt to taste
6 cups water

Seasoning:

1 tsp crushed or finely chopped garlic
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 broken red chilies
spring of curry leaves (optional)
1 tsp oil

Juice of  half a lemon

Procedure:

Place all the ingredients in a pressure cooker or instant pot and cook just long enough for the lentils to cook.
In instant pot you can cook it on high pressure for 7 - 8 minutes.
Heat oil add crushed garlic followed by mustard, cumin, red chilies and curry leaves and stir for a minute making sure not to burn.
Add this seasoning to the cooked lentils and vegetables.
Add lemon juice.

Note:
Choose vegetables of your choice.  Make sure not to skip tomato.

Palakura --Spinach Curry

Spinach simmered with sautéed onion, ginger, garlic and spices.



Ingredients:

1 lb chopped spinach (preferably frozen)
2 medium or 1 large onion chopped
2 tbsp oil
1 tsp ginger garlic paste
¾ tsp chili powder
¼ tsp turmeric
¼ tsp garam masala
Salt to taste
½ cup milk

Tempering:
¼ tsp mustard seeds
¼ tsp cumin seeds
½ tsp urad dal
1 red chili broken
1 spring of curry leaves

Heat oil in a sauce pan. Add tempering, when it starts to crackle add onions.
Saute for few minutes until the onions are semi transparent.
Add turmeric, chili powder, salt and sauté till the onions are transparent.
Add spinach and sauté for few minutes on medium to high till the spinach is totally defrosted and is well sautéed.
Add milk, when it starts to cook reduce flame and let it simmer.
Half way through simmering add garam masala.
Simmer to desired consistency.

Variation 1
 Bangaladumpa Palakura --Potato Spinach Curry

1 Large or 2 medium potatoes cut into chunks.

Add potatoes after adding turmeric, chili powder and salt.
Sauté till potatoes are semi cooked before adding spinach.

Increase chili powder to 1 – 1 ¼ tsp.
Increase garam masala to ½ tsp.
Increase milk to 1 cup.

Variation 2
Kodi guddu Palakura --Spinach Egg Curry

Add 2 boiled eggs after the spinach is sautéed, stir it for a minute and then add milk.

Tomato Pappu --Tomato with lentils (Tomato Dal)

Tomato dal is easy to make, highly nutritious and a super comfort food.

Toor dal cooked with onions and tomatoes and topped with aromatic tampering.


Ingredients:
1 cup Toor Dal (Pigeon peas)
2.5 cups water
3 medium tomatoes (cut into large pieces)
½ cup large onion chunks
1 tsp chili powder
¼ tsp turmeric
Salt to taste

Tempering:
2 tsp oil
½ tsp mustard seeds
½ tsp cumin seeds
1 broken red chili
1 spring curry leaves
¼ tsp asafetida (hing)

Wash toor dal. Add 2.5 cups of water to dal in a pressure cooker.

Add tomatoes and onions. Cook on high for two whistles and set the heat to low and let it cook for 10 – 12 mins. 


Once the pressure is off, remove lid. If there is excessive water, cook for few minutes without cover to get it to the desired consistency.
Add chili powder, turmeric and salt.

In a separate pan heat oil, add mustard, cumin, red chili and curry leaves followed by hing. Once the mustard starts spluttering, add the tempering to dal and mix will.

Enjoy it with hot rice and ghee.

Egg Pulusu --Eggs in tamarind sauce

My boys and many nephews and nieces are entering into their new phase of life at schools and new jobs. I have decided to post recipes that are very basic and easy to make for novice chefs. Most of the recipes will be of simple Andhra dishes for the days when these newbie cooks miss their home food.

The recipe today is Egg pulusu.

Boiled eggs cooked in sautéed onion and tamarind sauce. 



Ingredients:
4 eggs
1 tbsp oil
1 large onion chopped into tiny pieces
1 heaped tsp of tamarind paste (adjust to taste)
1 inch cube of jaggery or 2 tsp sugar (reduce if you do not like sweet)
1 tsp chili powder
¼ tsp turmeric
Salt to taste
2 cups water

Tempering:
¼ tsp mustard seeds
¼ tsp cumin seeds
¼ tsp fenugreek seeds
1 dry red chili broken
1 spring curry leaves
1 mashed garlic (optional)

Boil and shell eggs. Set them aside.
Heat the oil either in pressure pan or sauce pan.
When the oil is hot add the ingredients under tempering. When mustard starts spluttering add chopped onions and sauté till transparent. Add chilli powder, turmeric, salt followed by eggs and sauté for a minute. Add jaggery and tamarind paste and 2 cups water (add 1 cup of water and based on your desired consistency add more). If using pressure cooker, cook it until one whistle. If sauce pan cover and cook on medium for 10 mins.

This is a great side dish for white or brown rice. I recommend eating it with rice and plain or tomato dal. I will post the tomato dal recipe soon.

Chicken Fry (1)

Today’s recipe is one of many chicken fry variations. Ginger and curry leaves add a distinct flavor to this dish.


For Precooking
2 lbs Chicken (with bone or boneless)
1 – 2 tsp of red chili powder (adjust to taste)
½ tsp turmeric
1 tbsp coriander powder
1 tsp cumin powder
1 tbsp oil
Salt to taste

For Saute
1 large onion
2 inches on ginger
8 flakes of garlic
3 springs of curry leaves
6 green chilies slit in halves
4 tbsp oil
Salt to taste
1 ½ tsp of garam masala
Handful of chopped coriander leaves

For Seasoning
½ tsp mustard seeds
½ tsp cumin seeds
1 red chili broken

Mix chicken with chili powder, turmeric, coriander powder, cumin powder, salt, oil and set it on heat. If there is no moisture at all, add very little water (less then ¼ cup). Cook on medium to high heat. Do not slow cook, it makes the chicken hard. Cook until 80% of the moisture is evaporated. Remove from heat and set it aside.

Blend onions, ginger, garlic and curry leaves into a coarse paste. Just pulse it couple times in blender, it should be chunky.

Heat oil in a wide pan, add seasoning, when it starts to splutter add green chilies followed by the chunky onion paste. Add turmeric and salt and sauté until the onions loose the raw smell.

Add chicken and sauté for about 10 minutes on medium heat until it gets a nice golden brown hue.

Add garam masala of your choice, store bought ones like kitchen king or chicken masala are a good option.

Add coriander leaves mix will and remove from heat.

Enjoy it as a side dish to your Indian meal.

Kale Pappu - Kale with lentils (Kale Dal)


After a looong hiatus, I am planning on reviving the blog with Kale Dal.

Nutrition rich kale combined with protein rich dal is both healthy and delicious.



Ingredients
1 cup toor dal
3 tightly packed cups of chopped kale
½ a small onion chopped thin and long
2 – 3 green chilies slit (adjust to taste)
3 tsp oil
Juice of one lime
¼ tsp Turmeric
¼ tsp red chili powder (optional)
Salt to taste

Seasoning
½ tsp mustard
½ tsp cumin
1 red chili broken
Pinch of asafetida
1 spring curry leaves

Cook dal in pressure cooker
Heat oil in a large pan, add seasoning followed by onions and green chilies and sauté.
When onions are half done add kale and sauté till it wilts.
Add turmeric, red chili powder and salt.
Add the cooked dal, add water to get it to stew consistency.
Cook until the dal and kale blended well together.
Add lemon juice after you remove dal from heat.

Cooking time of kale can be adjusted to your choice. I do not like to over cook onions and kale. It gives a nice texture to the dish.


Enjoy it with hot rice and ghee. For a carb free meal try adding little more water while cooking and eat it as a soup.

Boorelu

Happy Sankranthi to all!
The Harvest festival Sankranthi is celebrated in most parts of India. The best place I ever celebrated this festival is at my grandparent’s village in West Godavari district. Front yards are decorated with beautiful rangoli and gobbemmalu, haridasu along with his gangireddu (decorated ox) comes to each house. Young girls dance around the gobbemmalu in the evenings. The atmosphere there in January is absolutely beautiful and festive.

It is a celebrated over four days. The first day ‘Bhogi’ is celebrated with a bon fire early in the morning. Second day ‘Sankranti’ is the day we all wear new clothes, pray and distribute sweets and gifts to farm workers and to domestic help. Third day is ‘kanumu’ and the fourth day ‘Mukkanumu’ is celebrated with variety of non vegetarian dishes.

Boorelu take the top spot in the sweets for this festival. They are made in huge quantities and become the main sweets of distribution.

Channa dal and jaggery are cooked together and formed into balls. These balls are dipped in urad rice batter and deep fried into a golden color.

Ingredients:

Stuffing (Poornam):
1 cup channa dal
1 cup grated or crumbeld jaggery
1 tbsp fresh grated coconut
Pinch of cardamom powder

Batter:
1 cup rice
½ cup urad dal
Salt to taste

Oil for deep frying

Procedure:
Soak rice and urad dal for 6 – 8 hours.
Blend them into a smooth paste using little water.
Add salt and set it aside for about 4-6 hours.

Cook channa dal in water until the dal is cooked. Drain excess water.
Mix jaggery and cooked channa dal together.
Cook in a thick bottomed pan to make poornam. Stir continuously so that it is not burnt.
When it comes to the consistency to form a firm ball remove from flame.
Add grated coconut and cardamom powder.
When it is cool enough to touch, shape poornam into small balls (size of table tennis ball).
Make sure the batter is thick enough to coat the balls evenly.
Heat oil in a wide pan.
Dip each poornam ball in the batter and gently leave it in the oil.
Do not crowd them in the pan. Place them few inches away from each other.
Fry on medium heat until they turn into golden brown color.



Serve them warm.

Make a small hole on the boori and pour in ½ tsp melted ghee to elevate the taste up another notch.

BellPepper Tofu

Bell Pepper Tofu is an easy to make tasty recipe from a dear friend. The nutritional goodness from vegetables and protein from Tofu with a side of roti or little brown rice makes this a healthy lite meal. Kasoori methi and coriander powder infuse loads of flavor into otherwise bland tofu.
Sauteed bellpeppers and tofu are simmered in tomatoes, coriander powder and kasoori methi for this scrumptious dish.
Ingredients:
2 bellpeppers cut into long strips
1 large or 2 medium tomatoes chopped fine
12 oz of extra firm tofu cut into long strips
2 tbsp coriander seeds
4 red chilies (adjust to taste)
1 tbsp crushed kasoori methi
2 tsp ginger garlic paste
2 tsp oil
Salt to taste
Turmeric a pinch

Procedure:
Make coriander and red chilies into a fine powder in a coffee grinder
Heat oil in a skillet, sear the tofu pieces. Set them aside.
Add ginger garlic paste to the oil, sauté till the rawness is gone but do not over fry
Add bell peppers and sauté till they are half cooked
Add coriander powder and sauté for a minute
Add tomatoes followed by turmeric and salt and sauté till the tomatoes disintegrate and form into gravy
Add kasoori methi
Cook till the bell pepper is almost cooked, don’t let it get mushy or loose the shape.
Add tofu and ¼ to ½ cup water so that the flavors are well blended. Cook till the water evaporates.

Eat it with rice or roti, or by itself for a carb free meal.

Chekkara Pongali

Happy New Year 2011.
Welcomed the New Year with a traditional south Indian sweet.
Rice and Moong Dal are cooked in jaggery syrup and garnished with raisins, cashews and almonds for this melt in the mouth dessert.


Ingredients:
1 cup rice

¼ cup moong dal

2 cups milk

1 – 1 ½ cup jaggery (adjust to taste)

2 tbsp ghee

Cashews, Almonds and Raisins for garnishing

Pinch of cardamom powder

Procedure:
Pressure cook rice and moong dal in two cups of milk and one cup of water.

Melt jaggery in a cup of water.

Add cooked rice and dal to the jaggery syrup and simmer, add 1 tbsp of ghee.

Shallow fry raisins, almonds and cashews in the remaining ghee and add it to the pongal.

Add cardamom powder.

Remove from flame and serve it warm.

Scrambled Tofu

Tofu is an important source of protein in a vegetarian diet of East Asia. Though I am neither a vegetarian nor a tofu lover, I try to include it in our diet due to its nutritional value. I scrambled and sautéed a firm Cajun flavored tofu along with onions and green chilies. I was prepared to settle for just about an edible dish, but to my surprise it turned out into a scrumptious side dish that we all relished with roti and rice. It has the look and feel of scrambled egg, the taste is different yet equally enjoyable.




Ingredients:

1 12oz Firm Tofu (Cajun flavor) drained and scrambled
2 medium onions chopped fine
2 green chilies slit
1 tbsp oil
¼ tsp turmeric
Salt to taste

Tampering:
½ tsp mustard
½ tsp cumin
½ tsp black gram / urad dal (optional)
1 red chili broken
Spring of curry leaves

Heat oil in a pan.

Add mustard, cumin, urad, red chilies and curry leaves. When urad starts to change color add chopped onions and green chilies.

Sauté till the onions start to turn transparent, add turmeric and salt and sauté for another 2 minutes.

Add scrambled tofu and keep stirring on medium heat for about 10 minutes, making sure not to burn it.

When you notice that the raw smell has transformed into a mouth watering aroma, it is time to remove from heat.

Roasted Catfish

Fish can be roasted in many different ways. Today I chose to keep the ingredients to the minimum and let the taste of the fish take the center stage. Catfish steaks were marinated in ginger garlic paste, red chili powder and lemon juice for two hours. I roasted them in my newly bought cast iron pan. It gave the fish a beautiful golden color and a wonderful roasted flavor.


Ingredients:
6 catfish steaks
2 tsp ginger garlic paste
2 tsp chili powder (adjust to taste)
½ tsp turmeric
1 tbsp lemon juice
Salt to taste

Marinate fish with all the ingredients and leave in the refrigerator for two hours.

Heat pan with 1 – 2 tbsp of oil.

Place fish in the pan and let them roast on medium heat for 5 – 8 minutes.

Gently flip them on to the other side.

Let them cook for another 5 – 8 minutes.

Increase the heat and roast for a minute on each side.


Note: ½ to 1 tsp of garam masala can be added to the marinade to increase the spice level. Coriander powder and cumin powder are other interesting choices.

Beetroot with yogurt

Beetroot, though known for all its health benefits, was not my choice of vegetable. I felt the cutting was tedious and the color gets on to all the utensils. That was until I came across this recipe which made it a highly desirable dish. It is extremely easy to make (with the help of a food processor with shredding disc) and too yummy to eat. Grated beetroot along with ginger is sautéed till done and yogurt is added before serving. Ginger and asafetida in tampering play a major role in this recipe. Do not attempt this recipe if you do not have those two ingredients.



Ingredients:
2 big beetroots
2 inches ginger
4 green chilies slit (adjust to taste)
½ tsp turmeric
Salt to taste
1 tbsp oil
1 tsp ghee or butter
1 ½ cups thick yogurt


Tampering:
½ tsp mustard
½ tsp cumin
½ tsp asafetida or hing
Few curry leaves

Grate beetroot and ginger together.

Heat oil and ghee in a wide pan.

Add mustard, cumin, curry leaves and asafetida followed by green chilies.

Add grated beetroot and ginger.

Sauté till done.

Add salt and turmeric and remove from heat.

When it reaches room temperature add yogurt and mix well.
It has a simple, lite, healthy feel to it. Tastes wonderful with roti or all by itself.

Scrambled Tilapia

After a very long break, today I am back with an easy to make, nutritious recipe. Steamed and flaked Tilapia fillets are sautéed with onions, ginger garlic and garam masala. Lemon juice and cilantro are added at the end for added flavor and aroma. Kids love this easy to eat boneless fish fry.


Ingredients:

1 lb Tilapia fillets
1 medium onion chopped fine
3 – 4 green chilies (optional)
2 tsp ginger garlic paste
½ tsp garam masala
1 tsp red chili powder (adjust to taste)
½ tsp turmeric
Salt to taste
1 tbsp oil
Juice of one lemon
Cilantro for garnishing

Tampering:

½ tsp mustard
½ tsp cumin
2 red chilies broken
Few curry leaves

Steam fillets in steamer of pressure cooker for 8 minutes. Do not over cook, they should be soft and moist not hard and dry.

In the mean time heat oil in a pan, add tampering, followed by onions and green chilies.

When onions are about half way cooked add turmeric, chili powder, salt and ginger garlic paste.

Transfer the fish fillets from the steamer into a bowl and scramble them with a fork.

Add fish to the pan when onion, ginger and garlic are well cooked. Sauté for 2 minutes and add garam masala.

Sauté for another 2 minutes, and remove from the flame.

Add lemon juice and cilantro.


Scrambled Tilapia tastes wonderful with rice or roti.


Note: Do not let red chili powder and garam masala over power the taste of the fish. Use them scarcely. For fresh garam masala powder 4 cloves, ½ inch cinnamon, 1 tsp poppy seeds, 1 tbsp coriander seeds.

Egg Kheema

Egg is a power house of nutrients, vitamins and minerals. It’s an ingredient in numerous recipes. Egg kheema is one of the many egg curry recipes. Boiled and chopped eggs are simmered in sautéed onions and tomatoes with ginger garlic paste and garam masala.

Ingredients

4 eggs boiled shelled and chopped
1 large onion finely chopped
2 – 3 tomatoes finely chopped
1 tsp ginger garlic paste
½ tsp garam masala
1 tsp chili powder (adjust to taste)
¼ tsp turmeric
Salt to taste
1 tbsp oil

Tampering

½ tsp mustard
½ tsp cumin
Curry leaves

Heat oil in a pan. Add tampering. Add onions and sauté. Add ginger garlic paste and sauté till it looses its raw smell.

Add tomatoes and cook for about 3 – 4 minutes. Add salt, turmeric, chili powder and cook till the tomatoes and mushy.

Add chopped eggs, garam masala and mix well. Simmer for about five minutes till the tastes are well incorporated.

Great side dish for Rice or Roti.

Note: You can prepare this when time is of the essence. Start with boiling the eggs, while they are boiling chop onions and tomatoes. When sautéing onions and tomatoes shell and chop the eggs. This is a quick n easy recipe.

Vegetable Cutlet

Vegetable cutlet -- crispy on the outside, soft and moist on the inside is an absolutely satisfying snack with evening tea. While coarsely mashed potato takes the top spot as the main ingredient, sautéed onions and green chilies add flavor, fresh coriander and ginger add wonderful aroma and bread crumbs form the crisp texture.


Ingredients
3 large potatoes boiled and semi mashed
1 medium onion finely chopped
3 green chilies finely chopped (adjust to taste)
½ cup peas boiled
½ tsp coriander powder
2 tsp grated ginger
2 tbsp finely chopped coriander
2 tbsp all purpose flour
½ cup bread crumbs
3 tbsp oil
Salt to taste

Sauté onions and green chilies in 2 tsp of oil. When the onions turn transparent add boiled peas and sauté for couple more minutes.

Add boiled and partially mashed potatoes and mix all ingredients together.

Add salt, coriander powder and mix well.

Remove from stove, add grated ginger and chopped coriander. Let it cool.

When it is cool enough to touch, make large lemon size balls.

Mix all purpose flour with ½ cup of water. Consistency should be thin, it should lightly coat the balls when dipped in it.

Sprinkle bread crumbs generously on a large plate.

Dip the potato ball in the flour batter. Let it coat evenly. Then roll it on the bread crumbs to evenly coat with crumbs on all sides.

Gently press with your fingers to change the shape into a patty.

Repeat this procedure for each potato ball.

Heat 2 tbsp of oil in a wide pan. Place patties gently next to each other.

When they turn golden brown flip them to other side, let the other side turn into golden brown too.

Mouth watering cutlets can be eaten with ketchup or any other sauce of your choice.
